

Cow’s milkcheeses
With its typical delicate and rounded flavour, cow’s milk is the most utilized in the production of Italian cheeses. It can be transformed into authentic masterpieces in the art of cheese-making, such as Gorgonzola and Taleggio, the two jewels in the crown of the House of Defendi.
The milk used by Defendi is of high quality and comes only from selected 100% Italian farms. The processing, aging and addition of lactic acid bacteria and selected moulds define the goodness, aroma and characteristic flavours of the cheeses. An irresistible flavour and a healthy and wholesome food.
Gorgonzola DOP Bacco dolce
A delicate taste and enveloping that is exalted by its soft and creamy consistency, a combination of irresistible pleasure.
Gorgonzola DOP piccante Bacco verde
Dedicated to those who love intense flavors and strong tastes. It is a compact and thick cheese. Its taste is strongly aromatic tending to spicy.

Cheeses from buffalo and mixed milk
The unmistakeable sweet flavour of buffalo milk makes it suitable for the production of buttery and refined cheese products. It is higher in fat than cow’s milk but has a much lower cholesterol content. Furthermore, it has a considerable content of protein, calcium, magnesium and phosphorous. Buffalo milk also naturally contains a high level of antioxidants, including beta carotene, with considerable beneficial properties. Defendi only uses milk from 100% Italian farms.
